‘Tis the season for sniffles, colds and sick days at home on the couch. Growing up, when I wasn’t feeling well, my Nonna always soothed my soul with a beautiful bowl of Pastina in Broth. It’s hearty, it’s warming, it’s nourishing and most importantly, it’s full of love. Now, I’m sure you know my love for Pastina is no secret. I consider this recipe to be one of my super powers, it comforts those in need, and what could be more gorgeous than that? The homemade stock is full of nutrients and packed with flavor, which the pastina absorbs. Adding an egg provides richness and body to the soup, but you can feel free to leave it out if you prefer. The soup is finished with a cozy blanket of freshly grated Parmigiano-Reggiano. Just Gorgeous.
