Cannelloni

Cannelloni are a labor of love that starts with rolling fresh pasta sheets , then mixing fresh ricotta with cooked spinach and seasonings. The pasta is rolled around the filling into tubes, then baked with cheese that melts into a gorgeous crust.  They remind me of a Lasagna but with a little less work. Still, this isn’t something I pull together in an hour, so I save it for a weekend or special occasion when I can recruit a few extra sets of hands to help me roll pasta and assemble the cannelloni.
