Roasted Potatoes

These Italian-style Roasted Potatoes are sinfully gorgeous, just like you are. Mashed Potatoes get all the love during the holidays, but my Nonna’s roast potatoes offer the best of both worlds; a crunchy exterior and a creamy, perfectly cooked interior. They are an amazing holiday side dish that requires very little effort. Now a few tips from Nonna that you must follow:

1. Once you peel and cut the potatoes into even 1-inch pieces, soak them in cold water before roasting. This will help rid the potatoes of excess starch and ensure the outsides are golden brown and crisp.
2. Thoroughly dry the potatoes before roasting. Once you get rid of all that excess starch, you next must pat the potatoes dry to remove any excess moisture.
3. Olive oil makes everything better. Seriously, don’t be shy here. Make sure each and every potato is coated with olive oil.
4. Aromatics are your (and the potatoes) BFF. I toss in a few unpeeled cloves of garlic and a hint of rosemary, so the potatoes get just a hint of flavor without overpowering their natural flavor and beauty.
