It has a lot in common with traditional basil pesto; they both contain basil, Pecorino or Parmigiano, nuts and oil; but the main ingredient that makes Trapanese pesto stand out is the addition of bright and sweet tomatoes. For this easy pasta sauce recipe, I used canned peeled cherry tomatoes because I absolutely love the flavor. I also added a little ricotta to the cooked pasta and pesto to make things extra decadent, just like you are.
